Fried Green Tomatoes

I got my first job, bussing tables at Lightfoot Cafe (now Lightfoot Restaurant) in Leesburg, VA when I was 15. I have Chef Ingrid Gustavson to thank and blame for my discerning culinary taste and have never had a better fried green tomato than from her kitchen. Ingrid's are perfectly fried and  topped with jalapeno cheddar cheese, szechwan chili cream and sauteed shrimp. So, needless to say, mine do not compare but when I have a hankerin' (which is every tomato season) and can't make it out to Lightfoot I make this recipe. Again sorry my measurements aren't exact! Hope you enjoy and please feel free to send me suggestions and your recipes!

Red Pepper Remoulade/Sauce:
Jar of roasted red pepper drained first or you can use fresh
Clove of Minced Garlic
Salt & Pepper
1 to 2 Tblspoons Mayo 
1 tblspn sour cream
Cayenne to taste

1/4 inch of vegetable oil, heated on medium test heat with a bread crumb when it's sizzles it's ready for frying
1+ Medium size green tomatoes sliced- Usually they are hard to find in the supermarket so go to your local farmer's market or grow them yourself! 
2 eggs beaten in shallow dish
Equal parts cornmeal and all purpose flour
Dip slices in egg and then dip in flour mixture
Fry both sides until golden

Top with cheddar cheese and sauce and chow down!
